Ferrero Rocher Lazy Girl Brownies with Hazelnut Fudge (AKA: How To Make Amazing Brownies FROM A BOX)! Hey, there’s no shame in using a short-cut. Life can be busy and stressful this time of year, the last thing you need is baking stress.

I wanted to make this recipe for Ferrero Rocher Lazy Girl Brownies as inclusive, as easy and as fool proof as possible. Even if you’re not a confident baker, or a complete beginner, this recipe is well within your reach.

Less Time, Big Impact

Starting with a brownie mix shaved about an half hour off the batter mix. No melting chocolate or tempering eggs. Just make a cup of coffee, melt butter, cool both and away you go, brownies in the oven in under 20 minutes.

I’m not going to lie. This recipe requires multiple stages: freezing, mixing, baking, cooling, melting, and chilling. With all the waiting in between for things to cool or set, this is a great recipe to stage over a couple of days.

I baked off the brownies on day one, covered and fridges them overnight then topped with the Hazelnut Fudge the following day. Is it worth it?! Oh yeah… it’s worth it!

To be honest, you could stop right there with your fudgy Ferrero Rocher Lazy Girl Brownies with Ferrero Rocher chocolates baked right inside. Or you could split out the Hazelnut Fudge on it’s own, but together?!

Which Boxed Brownie Mix Is Best?

In this recipe I used the most inexpensive brownie mix on the shelf – No Name Brownie Mix – to make a point: You can make amazing treats, for any occasion, AND stay on budget.

There are some good boxed brownie mixes on the market, use whatever fits your budget.

Hot tip: I picked up the Ferrero Rocher chocolates at my local discount store for almost half the price of the big box stores making Ferrero Rocher Lazy Girl Brownies well within my budget!

How To Make Amazing Brownies FROM A BOX

Taking a boxed brownie mix over the top is super easy. It’s just a matter of substituting the suggested ingredients on the box, with our own.

Ways to kick up your favourite brownie mix:

  • Replace water, with coffee
  • Replace oil, with butter
  • Add 1 teaspoon of good vanilla
  • Add required eggs

From there it’s all about what you put in them, or on them! The possibilities are endless: chocolate chunks or chocolate chips, nuts, dried fruit like cherries or figs, fresh fruit like raspberries or orange zest and of course, candy.

Or you can keep things simple and just finish with bits of pretzels, or a sprinkling of sea salt for salty-chocolaty Lazy Girl Brownies.

How much fudge is too much fudge?!

I baked these in an 8 x 8 pan, but to be honest, this Ferrero Rocher Lazy Girl Brownie recipe is best in a 9 x 9 pan (as noted below). The extra space gives them a bit more room to spread, making them thinner overall.

Do I have a 9 x 9 pan? No. I have an 8 x 8 pan. With the addition of the fudge, you get a very tall brownie in an 8 x 8 pan, which makes them harder to eat. So if you’re using an 8 x 8 pan, halve the recipe for the Hazelnut Fudge for better balance and THE PERFECT BITE.

Description

This recipe for Ferrero Rocher Lazy Girl Brownies with Hazelnut Fudge (AKA: How To Make Amazing Brownies FROM A BOX)  as inclusive, as easy and as fool proof as possible. It’s rich, fudgy, nutty and not over-the top sweet making use of my favourite holiday chocolates!


Ingredients

BROWNIES:
• 1/2 cup unsalted butter, melted, cooled
• 1/4 cup strong coffee or espresso
• 1 large egg
• 1 teaspoon pure vanilla extract
• 1 box browse mix
• 16 Fererro Rocher chocolates, frozen

HASELNUT FUDGE:
• 14 oz can sweetened condensed milk
• 1 and 1/2 cups semisweet chocolate chips
• 3/4 cup Nutella
• 1 cup whole roasted hazelnuts
• 1/2 cup hazelnuts, chopped
• 5 – 6 Ferrero Rochers, sliced in half


Instructions

BROWNIES:
1. Preheat the oven to 325F (325°F for dark non-stick pans) (180°C). Line a 9×9-inch square baking pan with parchment paper, leaving about 2-inches hanging over the sides and spray with non-stick spray. Set aside.
2. Using a large bowl, add coffee, cooled butter, vanilla and egg and whisk until mixture is smooth. Use your fingertip to check the temperature of the butter to make sure it’s not too hot – it should be warm. If it’s hot to the touch, let it cool for a few minutes before proceeding. This is so the egg doesn’t cook when added.
3. Add brownie mix and fold to combine using a rubber spatula. Do not overmix. Only until well blended, it might be a little lumpy, and that’s okay.
4. Scoop about half of the batter into the prepared pan, place frozen whole Ferrero Rocher chocolates in an even layer on top of the brownie batter. Scoop the rest of the batter directly on top of each Ferrero Rocher to cover completely. No need to spread, gently tap the pan on the counter a few times to better settle your batter. Bake for 35 – 40 minutes or until a toothpick inserted in centre comes out with a few moist crumbs. Allow to cool completely, about 2 hours, on a wire rack. (At this point you can cover and fridge or freeze if you’re advance baking.)
HASELNUT FUDGE:
1. Place a heat-proof bowl over a saucepan of simmering water and add your condensed milk, chocolate chips and Nutella, stirring constantly, until melted and smooth.
2. Fold in whole roasted hazelnuts and spread immediately over cooled brownies. Top with ½ cup of chopped hazelnuts, and press lightly, add the sliced Ferrero Rocher chocolates. Chill in the refrigerator to set, about 2 hours.
3. Once everything is set, gently lift Ferrero Rocher Lazy Girl Brownies out of the pan using the parchment and cut into 12 (or more) even squares. Taste. Eyes roll back moment… yup, totally worth the wait.
